Hi,
It is very normal for Parrot cichlids to dig the gravel. They dig because they want to build hiding place or a shelter for themselves. My advise is not to put the gravel back but let them be. If your fish is still shy, then I suggest you let them be for another few weeks, they will eventually overcome their shyness and bring their facinating personalities out. However, I would also suggest that you get a few thin rocks and build them a hiding place; that way they can be cozy and sort of have a home. I have many fish in my lab and my favorite ones are Purple parrots (love-heart shaped), great creation by man kind.
