I have a Snowflake eel and I love him. They are a good hardy species. They are especially good because they don't tend to have any problems eating. They tend to be 'garbage guts' and get into feeding patterns quite easily.
I would not put one in a tank that has not been cycled!! This is asking for trouble! I know that they are a hardy species but too much ammonia will kill them. The filtration system will not remove the ammonia in the water. You need a bio filter to do that!! So make sure that your tank has gone through the cycling stage first.
The best way to cycle your tank is with live rock and some clear household ammonia. You can buy the bacteria from your aquarium shop to put into your filter to kick start it. Other people will have other ways to cycle a tank but I have found this is the best. Do some research and learn about how the ammonia, nitite, nitrate cycle works.
Make sure that you have lots of places for your eel to hide. I have aragonite in the bottom of my tank. (I also have a trigger fish and a clown fish).
