Lion's can go quite awhile without eating, and refusal of food is especially common in the first few weeks of adding them to a tank. Try feeding him when the lights go out, lionfish are nocturnal hunters in nature. If he continues to refuse food try throwing some guppies in the tank. I've never seen a lion refuse guppies, and at least this will get something in him.
