I'm not a invertabrate person, myself, but I know that freshwater snails can have problems with their shells degrading in a similar fashion. It looks like the shell is disolving and the edges are whitish. Here is an apple snail site describing various snail diseases. Near the middle it describes how low pH and low calcium levels can combine to leach away shell.

I don't know if this applies to lobsters, but it is a place to start.
