Your tank setup sounds acceptable for one mudskipper. You can keep the humidity at a reasonable level simply by keeping a glass cover with a standard flourescent light on top. Keep the water and air temperature at about 80 degrees.

Neither guppies nor crickets are good mudskipper foods. Frozen seafood and marine formulas (mudskippers need some vegetable matter in these) are a much better diet. Good live foods are blackworms (now and then) and chopped earthworms (you can be more generous with these).
