What are your ammonia and nitrite readings? First thing you need to do is test your water quality. The results I'm sure will show you the answer...wrong fish in too small a tank leading to poor water quality. How often and how much water to you change? Filtration?
Your pH was too low??? What was it? Angels in the wild live in an acidic pH (below 7). Unless the pH was extremely low, I doubt the pH created your angels health problems.
Your gourami probably has septicemia, which would produce the red streaks.
