Cichlid colors-- huh what the heck?

Ok I have a 50 Ga tank with a bunch of africans and maybe some not so african cichlids. I have a red empress who is about 5 inches and is a grey with spots (will it change red and blue?)
I have some red peacocks, 3 inches, drabby brown with red tail spots (will they change blue and red too?), some spotted (O.B.) peacocks 3 Inches (will they get more blue?) and a compreciseps, 4 inches, grey with spots (will it change blue at all?) All of these are with over time---like will they ever or should i look for more colorful babys when I go to the store next time? Basically, can you tell if its a male or a female with the peacocks if they are still juviniles? Will they show color or still show stripes that early? Well that about it on my wanting to know but can't find it in any of my books sorta questions. Answer em all, or just one....i'll still appricate it!
