Not nitrITE - nitrATE. If it was nitrite everything would be dying as it is toxic even in small amounts, nitrate isn't so bad but can fatally stress new fish who haven't hardened up to it.
Your tank doesn't sound overstocked, your maintence regime is good and your filter is obviously capable of handling the load so I would check your tapwater. Sometimes it just comes out the tap full of nitrate and you might need to run it through a nitrate-removing resin before you add it to your tank during water changes. Also is your tank planted? If you can keep some alive they can reduce nitrate levels too, but if they start dying off they will just cause more pollution.
