I would not use salt on your injured gourami. What I would do is remove him to a hospital tank with clean water and treat with a light antibiotic to prevent infection while he heals.

I don't know very much about the characteristics of gouramis, but being top dwellers and territory-establishing, it's possible that one ignited the aggression in the other by changing the established territory. Liveaquaria.com lists the opaline gourami as "semi-aggressive" and says they can be territorial with each other (males) though other fish don't seem to be a problem. Their page doesn't list other gouramis as ideal tankmates.
