I would take the cory back. He can survive on his own but if you're going to keep fish, keep them in the best, most optimal conditions. For cories that means living in schools. So even if a store employee says they'll be ok alone, that doesn't mean it's a good idea. Especially if you went to Walmart or Petco or a similar store, because they're employees are generally not very well trained.

Keep doing frequent water changes on your tank, it takes about 3-4 weeks for cycling a new tank, as a guideline. When you do your test and the ammonia and nitrites read 0, your tank is cycled. Then do a smaller weekly water change (or every 7-10 days), but keep monitering it for a while.

The betta + four platys should be a good mix for the tank, and though the extra cory wasn't really overstocking, I wouldn't get any more fish. If you feel the need for a catfish try an otto. Definitely don't get any pleco species, they need a much bigger tank (like 50 gall minimum) no matter how small they seem in the store
