I wouldn't stay overstocked- but problems:

1- 1" of fish per gallon of water is a myth. The specific fish you have though are OK for your tank size

2- cories are schooling fish and need to be kept in groups, otherwise they will be more stressed and likely to get sick. Cories like groups of 6 or more, so would need a 20 gallon tank.

3- your ammonia has risen likely because there's more going into the water and your previous biofilter was only established for a single fish. Not enough bacteria to deal with the sudden influx of so much MORE ammonia. What your seeing is probably a spike that is part of the cycling process.

My advice- take the cory back, and continue with heavy frequent water changes till the ammonia goes back down. What kind of filter are you running?
